When it comes to bread, sourdough is the lowest of all on the Glycemic Index, which means it doesn't spike blood sugars like most other breads. This is not to say however, that sourdough is low carb - it isn't. And it is definitely not Keto. But if you are simply trying to contol or reduce "sugars" in your diet, this may be a very good alternative for you.
